If you’re Jewish traveling in Costa Rica, Sabress isn’t just a fantastic Moroccan kosher restaurant with quick friendly service and a fabulous menu in downtownJaco, This is home base. This is the local watering hole to get news, to meet friendly faces and kibbitz. The husband and wife team (Izu & Toni) have been here 25 years, originally from Ashdod and Tel Aviv. They have created a gathering place, an oasis in a spiritual desert, so welcome when traveling to Costa Rica for the first time. Upstairs is a synagogue. They cater Shabbos and holiday meals. Perhaps best of all, they have beautiful suites for rent (some able to accommodate very large families) behind the restaurant. There is secure, gated parking for overnight guests and a swimming pool, too.

Exploring the Rich Tapestry of Israeli Cuisine
A Culinary Journey
Israel, a land steeped in history and culture, offers more than just breathtaking landscapes and ancient landmarks. Its cuisine, a vibrant tapestry woven from diverse cultures and traditions, stands as a testament to the country’s rich heritage. In this article, we’ll embark on a captivating culinary journey to uncover the intricacies and flavors that define Israeli food.
A Meeting of East and West
Israeli cuisine is a delightful convergence of various culinary traditions, owing to the diverse heritage of its inhabitants. The cuisine seamlessly blends Middle Eastern and Mediterranean influences with dashes of Eastern European and North African flavors. This unique amalgamation has led to a range of dishes that are both comforting and excitingly novel.
A Vibrant Melange of Flavors
At the heart of Israeli cuisine lies a commitment to fresh, high-quality ingredients. From colorful produce to aromatic spices, each element plays a crucial role in creating harmonious and tantalizing dishes. It’s a cuisine that celebrates the boldness of spices while maintaining a focus on health and wellness.
The Iconic Hummus
No exploration of Israeli cuisine is complete without indulging in the iconic hummus. Creamy and indulgent, this blend of chickpeas, tahini, olive oil, and a touch of lemon juice is a staple in Israeli households. Whether served as a dip with warm pita bread or as a side to other dishes, hummus embodies the essence of comfort food.
Savory and Satisfying Falafel
Another beloved dish that has captured the hearts (and taste buds) of people around the world is falafel. Crispy on the outside and tender on the inside, these deep-fried chickpea or fava bean balls are often nestled in pita bread alongside fresh vegetables and drizzled with tahini sauce. The symphony of textures and flavors in falafel is a testament to the artistry of Israeli cuisine.
Mouthwatering Shawarma
Shawarma, a dish with roots in the Middle East, has found a cherished place in Israeli cuisine. Thinly sliced marinated meat, typically lamb, chicken, or beef, is layered on a vertical rotisserie and slow-cooked to perfection. The result is tender, succulent meat that’s a delight to the senses. Served in a pita with a medley of accompaniments, shawarma is a favorite street food that embodies the dynamic nature of Israeli gastronomy.
Abundance of Fresh Produce
Israeli cuisine is celebrated for its generous use of fresh vegetables and fruits. The Mediterranean climate provides an ideal environment for growing an array of produce, from juicy tomatoes and crisp cucumbers to fragrant herbs and zesty citrus fruits. These ingredients not only add vibrancy to dishes but also contribute to their healthful qualities.
The Vibrant Mezze Spread
Mezze, a tradition embraced from the Middle East, is a beloved aspect of Israeli dining. Comprising an assortment of small, flavorful dishes, mezze invites diners to experience a symphony of tastes in a single meal. From creamy baba ganoush and tangy labneh to stuffed grape leaves and pickled vegetables, the mezze spread is a celebration of variety and communal dining.

Shaping Israeli Identity

Israeli cuisine, much like the nation itself, is an intricate mosaic of identities. It’s a reflection of the waves of immigration that have shaped the country, with each wave contributing its culinary traditions to the mix. From Ashkenazi Jews bringing hearty dishes like cholent to Sephardic Jews infusing their cuisine with aromatic spices, Israeli food tells the story of a nation built on diversity.
Beyond Tradition: Innovation in the Kitchen
While deeply rooted in tradition, Israeli chefs have also carved a niche for themselves on the global culinary stage through innovation. With a focus on farm-to-table practices, sustainability, and artistic presentation, contemporary Israeli cuisine marries tradition with modernity, resulting in dishes that are as visually stunning as they are delectable.
Conclusion
Israeli cuisine, a captivating blend of flavors, cultures, and history, is a testament to the country’s vibrant tapestry. From the humble hummus to the sophisticated dishes found in fine dining establishments, Israeli food has earned its place as a global culinary treasure. It’s a cuisine that invites you to explore its myriad flavors, experience its rich history, and celebrate its role in shaping the nation’s identity.
